Citric acid monohydrate (oxy-tricarbalic acid) is an organic acid. Formula: C3H4(OH)(COOH)3 or C6H8O7, a crystalline hydrate form of a tribasic organic acid. Its salts are called citrates. It dissolves very easily in water with a strongly endothermic heat of solution; the solution has a pleasant sour taste and an acidic reaction. It is also easily soluble in ethanol, but less so in ether.
In foods, it is mainly used as an acidity regulator and flavoring agent (E330). In fruit-based foods, it delays the discoloration of fruits caused by oxygen. There is no restriction on its maximum daily intake. It is also used in the production of cleaning agents suitable for surface cleaning and descaling.
